A collaboration with Casa Agria Specialty Ales, The Nord was produced entirely at De Garde and is a wild ale aged in Oak barrels with some of the yeast culture from Casa Agria. The blend made at Casa Agria is “El Sur.” From De Garde: “The Nord, was as always inoculated in our coolship. After fermentation began in oak barrels, we added a small culture of wild yeast and bacteria from Casa Agria. Likewise, after inoculating their beer with their native yeast and pitched cultures, Casa Agria added some slurry of yeast and bacteria that we pulled from a couple of our older barrels once their fermentation had begun. It is a delicious and aromatic exploration of similarities and differences. Ingredients local to each of us, yeast and bacteria shared along with recipe, yet different outcomes. “
